

Lemon Cheesecake
Ingredients
75g Butter
Juice and ring of one lemon
50g Caster Sugar
225g Cottage Cheese
150ml Double Cream
Base
Crush the biscuits
Melt the butter and add biscuits
Once combined press the mixture intot he base of a tin or dish
Place in the fridge to cool
Filling
Sieve the cottage cheese to make it smooth
Whip the cream until it stands in stiff peaks
Add the cottage cheese, lemon juice, rind and the sugar to the cream
When the base has set pour the filling over the top and leave to set in the fridge for at least an hour before serving
